I saw this Chicken Enchilada Ring on Kelly's Korner blog a while back and just got around to cooking it! It was excellent! I followed the recipe except I did not use olives because we don't like them and I used canned chicken because it is WAY to hot to be running the oven more than you have to. HV and I made this tonight for dinner. It was good. Thanks for your input on my recipe modification. It worked out just fine. It was quite bland and so I think if I make it again (which the girls have asked for it again), then I might add a little something extra for some more flavor!
