Menu Monday - Update

UPDATE:

After going to the store I made a few changes to the menu and someone asked for the recipe for Baked Tortellini! It is super duper easy. See below

Well we did horrible last week! ARRGGHHH!!! We did good until Trev went out of town dove hunting and I ate left over sandwiches and hotdogs. BARF! Anyway, no fear here though we just pushed some things back this week thanks to frozen food and the food saver! :)

Monday - Chicken Quesadilla
Tuesday - Popcorn Shrimp, Au Gratin Potatoes (Old rotten potatoes is what Trev calls them), Salad
Wednesday - Baked Tortellini, Salad
Thursday - Jumbalaya, Salad
Friday - Hamburgers, Fries

Baked Tortellini

Ingredients:
1 package of whole wheat 3 cheese tortellini (I use the Burtoni brand)
1 lb of meat (I sometimes use extra lean ground beef and sometimes reduced fat ground sausage)
1 jar of spaghetti sauce (I use fire roasted tomato and garlic by classico)
About a cup of cheese (Pick your favorite. Sometimes I use cheddar and sometimes mozarella. Use what you ahve around)

Directions:
1) Boil tortellini according to package directions until done
2) Brown meat in large skillet. Once cooked add spaghetti sauce and simmer
3) After tortellini is done add it to the skillet with meat and sauce.
4) Place mixture into 9x13 pan
5) Top with cheese and cook at 350 for about 15 minutes or until cheese is melted and is bubbly.

Quick easy and as you can see not an exact science. The person who asked for this recipe is one of Tanna's Beauties. So, I definelty think you could make this recipe more healthy if you wanted by using extra lean meat or ground turkey and using reduced fat cheese or something. :)
